Lemon Fried Bluegill

1 c. flour
2 tsp. lemon peel, grated
½ tsp. salt
¼ tsp. pepper
1 c. water
vegetable oil (for frying)
1½ lb. blue gill
flour
Blend flour, lemon peel, salt and pepper. Add water.
Chill for 30 minutes. Heat 2 inches of oil in a fryer to
375°. Coat fish in flour. Dip in batter. Fry 3 minutes.
Drain on paper towels.
