CATFISH

1 cup pancake flour

1/2 cup beer ( or to your choice of consistency )

2 tsp. sugar

1tsp. salt

1/4tsp soda

1/2 tsp. baking power

1/4 tsp onion salt

dash of pepper ( optional )

 

Dredge catfish filets cut in small pieces and deep fat fry at 375 degrees until golden brown.
