Basting Sauces

Here are a couple of really good basting sauces for BBQ'ing
Smoky-Honey BBQ Sauce
1 cup honey
1 cup chili sauce
1/2 cup cider vinegar
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1/2 teaspoon minced garlic
2 to 3 drops liquid smoke
Combine all ingredients except liquid smoke in a medium saucepan over medium heat.Cook,stirring frequently,20-30 minutes.Remove from heat.Add liquid smoke to taste.Serve over grilled chicken,turkey,pork,spareribs,salmon or hamburgers.
BBQ Basting Sauce:
1/2 cup A.1. Steak Sauce
1/2 cup ketchup
1/2 teaspoon liquid hot pepper seasoning
Blend steak sauce,ketchup and hot pepper seasoning.Use to baste while grilling beef,ribs or poultry.

Quick question, do you typically baste toward the end of grill time, or al the way through the cooking process?
I've had troubles with the sauces burning in the past.

I usually always baste through the whole cooking process,except...I don't baste the last 3 minutes of grilling time.Just be sure to keep the meat away from direct heat,the last few minutes.If you are to use these on chicken....use tongs.Don't poke the chicken.The juices will be released,which causes the meat to dry out and possibly burn.I never use a fork,unless I use boneless,skinless chicken breasts, and that's when I use marinade.Discard leftover marinade with poultry always.Don't REUSE!
